Shrimp Puffs
INGREDIENTS
- Filling:
- 2 cans 4 1/2 oz. shrimp
- 2 tbsp. chopped onion
- 2 tbsp. chopped green pepper
- 1 cup grated old cheddar cheese
- 1 can cream of shrimp soup
- 1/4 cup mayonnaise
- salt and pepper to taste
- Puffs:
- 1 cup boiling water
- 1/2 cup butter
- 1 cup flour
- 3 eggs
DIRECTIONS
- Filling:
- Combine all ingredients.
- *Filling can be frozen separate or in puffs.
- Puffs:
- Add butter to boiling water; heat to boiling.
- Add flour, stir over heat until smooth and the mixture leaves sides of pot.
- Cool slightly, add unbeaten eggs, one at a time. Beat until glossy.
- Chill until it holds its shape.
- Place 1/2 tsp. on a buttered cookie sheet.
- Start the oven at 400º reducing to 350º when you put the cookie sheet in.
- Bake for 30 to 35 minutes.
- Cool the baked puffs and then cut in half. Fill with shrimp filling and bake for 10 minutes at 350º.
