Shrimp Puffs

INGREDIENTS

- 2 slices of white bread, crusts removed
- 1 egg lightly beaten
- 1/3 cup mayonnaise
- 8-oz baby shrimp, chopped
- 1/4 cup finely chopped red pepper
- 1/4 cup of finely chopped, onion(Have used scallions)
- 1 tsp dijon mustard
- 1/4 tsp ground pepper
DIRECTIONS
- Combine the egg, bread pieces and mayonnaise.
- Add remaining ingredients and mix well.
- Chill for a few minutes then shape into small balls about 1-1/2".
- Arrange on a non stick baking sheet and bake for 25 minutes at 375 degrees.
- This is a very tasty recipe and it can be mixed up early in the day.
- I hand tear the bread into small pieces.
- They will puff up and brown nicely.
