Shrimp Scampi
INGREDIENTS
- 2 sticks butter
- 1/2 cup virgin olive oil
- 1 large bellpepper chopped
- 2 sticks celery chopped
- 1 1/2 white onions chopped
- 1 cup green onions chopped
- 1 whole garlic peeled and sliced
- 1/2 cup parsley
- 2 tbsp basil
- 1 tbsp oregano
- 2 bay leaves finely crushed
- 2 tbsp lemon juice
- 2 tbsp Wishetire sauce
- 2-3 tbsp crab boil (optional)
- 3 lbs med-large shrimp peeled
- salt to taste (remember shrimp take lots of salt)
- 1 1/2 package of angel hair pasta
DIRECTIONS
- Cook angel hair pasta, add lil salt to water, add crab boil, drain and let cool.
- In large heavy skillet, melt butter til clarified, add olive oil.
- Add bellpepper, celery, onions, cook on low-med heat until seasoning is clear
- Add basil, oregano, bay leaves, parsley, and garlic and lemon juice, Worstehire sauce. Cook on low until all garlic is cooked to soft consistancy.
- Add Shrimp and salt, cook until shrimp are pink and have some shrinkage.
- Set aside and let cool.
- Combine pasta and shrimp sauce, toss, and add parmesian cheese and serve.
- This recipe serves a large family. It can be cut in half for family of 5, however I prefer to save left overs in frig for leftovers as it is even better the next day.
