Shrimp and Crab Ceviche
  • 1 pound cooked shrimp (small size)
  • 1/2 pound lump crab meat, cooked
  • 1/2 cup lime juice
  • 1/2 white onion, chopped
  • 1 pound tomatoes, seeded and chopped
  • 2 jalapeno peppers, seeded and chopped
  • 1 bunch cilantro, chopped
  • 2 T olive oil
  • 1 cup jicama, peeled and chopped
  • 1 avocado, chopped
  • 5 dashes Mexican hot sauce
  • Salt and pepper to taste
  1. Place shrimp and crab in large mixing bowl. Blend gently.
  2. Mix remaining ingredients and pour over shrimp and crab mixture.
  3. Cover and refrigerate until ready to serve.
  4. Garnish with cilantro, lime wedges and corn chips.
Usually you have the citric acid in the lemon/lime juice "cook" the seafood. But many people are uncomfortable with uncooked seafood so this recipe uses cooked meat.
