Shrimp with Feta over Mixed Greens with Feta Vinaigrette
INGREDIENTS

  • Preparation Time: 200 (inc marinate time)
  • 40 shrimp, peeled and deveined
  • 2 lemons, juiced and zested
  • ½ bunch cilantro, chopped
  • ½ cup olive oil
  • 1 cup wine vinegar
  • ¼ cup sugar
  • 3 garlic cloves, minced
  • 5 scallions, chopped
  • 2 limes, juiced and zested
  • Salt and pepper, to taste
  • 3 lbs mixed greens, washed
  • 2 oz vinaigrette
  • 1 lb crumbled feta cheese
DIRECTIONS
  1. Preheat oven to 350° F.
  2. Mix all ingredients together except shrimp and greens.
  3. Adjust seasoning if needed.
  4. Add shrimp and let marinate for 3 hours.
  5. Make vinaigrette dressing.
  6. Cook shrimp in a 9 x 13” pan (this may take 2 pans) until done, roughly about 20 minutes in the oven on 350° F.
  7. You can also grill them in the summer if you like—excellent flavor.
  8. If baking, make sure to add all the marinade with shrimp while they are baking.
  9. Once finished, allow shrimp to cool in the juices.
  10. To assemble, toss greens with vinaigrette.
  11. Place on plate and top with shrimp and crumble feta on top.
  12. ---Feta Vinaigrette---
  13. ½ quart olive oil, light
  14. 1 quart wine vinegar
  15. 1 cup sugar
  16. salt and pepper, to taste
  17. 4 garlic cloves, chopped
  18. 2 lemons, juiced and zested
  19. ½ bunch cilantro, chopped
  20. 1½ cups feta, crumbled
  21. Mix all ingredients and blend.
  22. Taste and adjust seasoning if needed.
  23. Chill.
  24. Don't allow vinaigrette to sit out.
