Shrimp with peanut noodles

INGREDIENTS
  • 1/6 cup creamy peanut butter
  • 1/6 cup water
  • 2 Tbsp soy sauce
  • 3/4 Tbsp rice vinegar
  • 1 tsp chili paste with garlic
  • 1/4 tsp sugar
  • 1/4 tsp salt
  • 1/2 lb medium shrimp, peeled and deveined
  • 1/4 tsp salt
  • cooking spray
  • Wide rice noodles, cooked
  • 1/2 red bell pepper, cut into julienne strips
  • 1/2 cup chopped seeded cucumber
  • 1/4 cup diagonally cut green onions
  • 1 1/2 Tbsp chopped roasted peanuts
  • 1 Tbsp cilantro leaves
  • 2 lime wedges
DIRECTIONS
  1. Combine first 7 ingredients, stir with a whisk, set aside
  2. Toss shrimp with 1/4 tsp salt. Saute in a nonstick skillet coated with cooking spray over medium high heat 3 minutes per side, or until done.
  3. Combine peanut sauce, shrimp, noodles, bell pepper, cucumber, and onions in large bowl.
  4. Toss well.
  5. Sprinkle with peanuts and cilantro.
  6. Serve with lime wedges.
