Shrimp with peanut noodles
INGREDIENTS
- 1/6 cup creamy peanut butter
- 1/6 cup water
- 2 Tbsp soy sauce
- 3/4 Tbsp rice vinegar
- 1 tsp chili paste with garlic
- 1/4 tsp sugar
- 1/4 tsp salt
- 1/2 lb medium shrimp, peeled and deveined
- 1/4 tsp salt
- cooking spray
- Wide rice noodles, cooked
- 1/2 red bell pepper, cut into julienne strips
- 1/2 cup chopped seeded cucumber
- 1/4 cup diagonally cut green onions
- 1 1/2 Tbsp chopped roasted peanuts
- 1 Tbsp cilantro leaves
- 2 lime wedges
DIRECTIONS
- Combine first 7 ingredients, stir with a whisk, set aside
- Toss shrimp with 1/4 tsp salt. Saute in a nonstick skillet coated with cooking spray over medium high heat 3 minutes per side, or until done.
- Combine peanut sauce, shrimp, noodles, bell pepper, cucumber, and onions in large bowl.
- Toss well.
- Sprinkle with peanuts and cilantro.
- Serve with lime wedges.
