Silver Snowflake Cupcakes

  • 2 cups flour
  • 1 1/2 cup sugar
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 cup shortening
  • 1 cup milk
  • 1 tsp. vanilla
  • 4 egg whites
  • 2 oz. White candy melts
  • Vanilla bean frosting
  1. Preheat oven to 350 degrees
  2. Line muffin tin with paper liners or use greased silicone liners.
  3. Beat all ingredients except egg whites in a large bowl on low speed for 30 seconds, scraping bowl constantly
  4. Beat on high for 2 minutes, scraping bowl occasionally
  5. Add egg whites and beat on high speed for 2 minutes, scraping bowl occasionally
  6. Pour into muffin cups
  7. Bake for 20 minutes or until tops are just golden and toothpick inserted in center comes out clean
  8. While cakes cool, make snowflakes by melting candy according to package instructions
  9. Pour melted candy into a ziploc freezer bag and snip off a small corner
  10. Draw snowflakes onto wax paper (I place a drawn template underneath)
  11. Allow to harden and store in a cool place until ready to use
  12. When cakes are completely cool, frost and add snowflakes
I have always loved the Silver White Cake Recipe from the old Betty Crocker Cookbook, and my new silicone cupcake liners needed a road test, so I whipped up these quick cakes for a post-holiday party. The snowflakes were the crowd pleaser, since the cakes stuck! They need a good dowsing with cooking spray before pouring in batter, unlike the "light" greasing the package called for.
