Simmered Chinese Chicken
  • 1 whole chicken, cut up
  • 1 Tbsp oil
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 1/2 cup water
  • 1 Tbsp ketchup
  • 1 garlic clove, pressed
  1. Brown chicken pieces in oil, 5 minutes on each side, in Dutch oven.
  2. Mix together remaining ingredients and pour over chicken.
  3. Bring to a boil and simmer, covered, about 45 minutes or until chicken is no longer pink. Remove chicken and set aside.
  4. Mix together 2 Tbsp corn starch in 1 Tbsp cold water and pour into liquid.
  5. Stir and simmer 5 minutes or until thickened. Pour over chicken and serve with white rice.
I fix this for my family often; it's easy and they love the sauce.
