Simple Homemade Granola
INGREDIENTS

  • 3 cups old-fashioned oats
  • 1 cup sliced raw almonds/pecans/nuts of your choice
  • 1/4 cup raisins (and/or other dried fruit)
  • 1/4 cup raw sunflower seeds
  • 2 tbsps coconut oil, melted
  • 1/4 cup honey, agave syrup, or maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp natural peanut butter, melted (optional)
  • 1 tbsp cinnamon
  • pinch of salt
DIRECTIONS
  1. Preheat oven to 325 degrees. Combine all ingredients in a large mixing bowl, adding melted coconut oil if necessary to make sure mixture is completely covered (there should be no dry oats hanging out).
  2. Spread oats mixture onto parchment or foil-lined baking sheets. Bake for 10 minutes, then stir. Bake for an additional 8-10 minutes until the top oats have turned golden brown. Let cool for 10 minutes before breaking up, then store in mason jars, Ziplock bags, or Gladware containers.
  3. Serve with milk, yoghurt, or by the handful for a delicious and healthy snack! I enjoy mine with berries or bananas and yoghurt.
RECIPE BACKSTORY
Granola freezes well when stored in an air-tight container. When you want to use it again, thaw overnight on the counter - thawing in the refrigerator will toughen the dried fruit.
