Simple grilled chicken
  • Cooking Time: 15-20 minutes on the grill

  • 6-8 pieces of bone-in chicken
  • freshly ground sea salt
  • freshly ground black pepper
  • olive oil
  1. Soak chicken in heavily salted iced water for an hour before cooking. Drain chicken well on paper towels. Put chicken in a large bowl and coat with olive oil. then salt and pepper to taste. Let chicken rest in fridge until grill is preheated. Put chicken on well oiled preheated grill and cook, turning frequently until instant thermometer registers 165F. Rest for 10 minutes before serving.
Some days one doesn't want anything fancy, just simple grilled chicken.
