Skiers Soup
  • 5 bouillon cubes 5 cups of water
  • 1 lb of ground beef 1 large onion chopped
  • 1 large garlic, 1 tsp 2 28 ounce cans of tomatoes
  • 1 can kidney beans 1 cup uncooked rice
  • 6 carrots cut up 6 stalks of celery
  • 1/2 pound of mushrooms Parsley
  • 1 tsp basil String beans fresh or frozen
  1. Simmer bouillon cubes in water in a large soup pot. Brown ground beef, add onion and garlic and drain fat and add to soup pot. Add everything else except beans and parsley. Simmer 3-5 hours adding water as needed. At the end of cooking add beans and parsley.
  2. This is great with grated cheese and served with garlic bread as a meal. This soup improves with age. Serves 6.
