Skillet Cabbage and Noodles

  • 4 cups (approx) hot water
  • 1 medium head of cabbage, chopped but not minced
  • 1 medium onion, chopped into small pieces
  • ½ teaspoon minced garlic
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 teaspoon garlic powder
  • 1 bag of egg noodles of any size
  • 1 pound of bacon, cooked and chopped into bite size pieces
  • 1 cup of chopped or shredded cooked/baked ham, (leftovers or lunch meat is great for this)
  • 1 stick of margarine or butter, cut into small pieces
  • *Hot Sauce (if desired) add separately to each serving
  1. In an electric skillet add cabbage, onion and water. Bring to a boil and lower heat to simmer. Cover and let cabbage cook for 15 minutes or until soft. Add seasonings and stir. Add egg noodles and mix well. Cover and let simmer for 20 minutes. Check water after 10 minutes and add more if needed just to cover the bottom of the pot or skillet to make sure the noodles are cooking and nothing is sticking to the pan. Only add enough to cover the bottom of the skillet. Add bacon and ham, cover and let cook another 10 minutes. Check noodles to make they are cooked, turn off the heat, add the butter in small pieces over the top. Cover and let sit for 20-30 minutes or until noodles have finished cooking and are soft. Stir and eat. Re-heat if necessary.
  2. ***For added “kick”, spoon 1 cup of cabbage/noodles into bowl or on plate and add 1/4 teaspoon of Hot Sauce. Mix and eat.
I had leftover cabbage from something else I had made. Since I like cabbage and noodles together I came up with this after adding ingredients I had in the fridge.
