Slider Buns using Grandmas GF Baking Mix

  • Servings: Makes 20-24 slider buns.
  • Preparation Time: 1 hour & 15-20 minutes including 1 hour raise time.
  • 1 1/2 c. milk
  • 1/4 c. olive oil (or oil of choice)
  • 4 eggs
  • 3 T. sugar
  • 1 t. salt
  • 1 T. active dry yeast
  • 1 T. + 1/2 t. zanthum gum
  • 3 1/2 c. Grandmas GF Baking Mix
DIRECTIONS
  1. Heat milk in microwave for 2 minutes on high. Meanwhile using either a stand mixer or a hand mixer, add milk and oil, beat on low speed. Add eggs, sugar, and salt. Beat on low. Add yeast and continue beating. Turn off mixer and stir in by hand Grandmas GF Baking Mix and zanthum gum until moistened. Turn mixer back on and beat for 1 minute at medium speed. Pour batter into 20-24 muffin cups that have been well greased on the sides and lined on the bottom with parchment paper or wax paper (or just use cupcake liners). Put in a warm place to rise until doubled, about an hour. Bake in an oven preheated to 350 F for 20 minutes. Cool in pans for 5 minutes, then remove to wire rack to cool completely. Since sliders have no preservatives, keep out only what you will use in a day or so and freeze the remainder to use as needed.
RECIPE BACKSTORY
My son in law has a large family and we entertain quite a lot. Sliders with deli meats and cheese are an easy and favorite way to feed big groups, letting them build their own sandwiches. I don't tell anyone they're gluten free unless they need to know, and no one seems to notice.
