Sloppy Joe Potatoes
INGREDIENTS

  • 2 large Pontiac potatoes, (about 325g each)
  • 125g lean minced beef
  • 2 teaspoons canola oil
  • 1 small onion, finely chopped (about 1/2 cup)
  • 2 cloves garlic, crushed
  • 1/3 cup finely chopped green capsicum
  • 1 1/4 cups prepared tomato based pasta sauce
  • 3 teaspoons chilli sauce
DIRECTIONS
  1. 1. Preheat oven to 220C. Scrub potatoes; pat dry. Score aaround circumference with a sharp knife. Bake until tender, about 1 hour.
  2. 2. Place potatoes on a wire rack; cool for 15 minutes. Reduce oven temperature to 180C. Slice each potato in half lengthwise. Scoop out flesh, leaving a 1cm thick shell. Place potato flesh in a bowl and mash.
  3. 3. In a large non stick frying pan, cook beef over medium high heat, stirring frequently, until browned, about 3 minutes. Using a slotted spoon, remove beef from pan. Wipe pan clean with paper towels.
  4. 4. Add oil, onion and garlic to pan; cook over a medium heat for 1 minute, stirring frequently. Add capsicum; cook for 2 minutes, stirring occasionally. Stir in pasta sauce; bring to the boil. Stir in chilli sauce, beef and mashed potatoes; cook until heated through, about 1 minute. Spoon beef mixture evenly into potato shells.
  5. 5. Spray baking tray with vegetable oil cooking spray. Place shells on tray. bake for 20 minutes, or until heated through. Serve on individual plates.
