Slow Cooker Curried Chicken

INGREDIENTS
  • 1 1/2 lbs boneless,skinless chicken thighs
  • 1 onion chopped
  • 3 potatoes, cubed
  • 1 apple chopped
  • 2 tbsp. curry powder
  • 1 can (10 oz.) chicken broth
  • 2 cups frozen peas,thawed
  • 2 cups uncooked minute rice
DIRECTIONS
  1. Place chicken in slow cooker or crock pot and top with onion.
  2. Add potatoes, apples, curry powder, and broth. Cover and cook on low for 8 to 10 hours(or on high for 5 hours). Stir in peas and rice and cook an additional 20 mins.
