Slow Cooker Two Bean Chili
INGREDIENTS
  • 1 sprays cooking spray, (5 one second sprays per serving)
  • 1-1/2 medium leeks, chopped OR 1 large, white part only, finely chopped
  • 1 Hungarian pepper, cored, seeded and finely chopped (or an Italian pepper)
  • 1/2 tsp. red pepper flakes, or 1 jalapeño pepper, cored, seeded and minced (do not touch seeds with bare hands)
  • 1 large celery rib, trimmed and chopped
  • 2 cups (1 8 oz. pkg.) mushrooms, sliced
  • 2 medium garlic cloves, minced
  • 4 cups cauliflower, florets
  • 1 can (15 oz.) garbanzo beans, rinsed and drained
  • 1 can (15 oz.) pinto beans, rinsed and drained
  • 1/2 tsp. dried oregano, crushed
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/4 tsp. ground black pepper
  • 1/2 tsp. table salt
  • 2-1/2 cups fat free chicken broth, or vegetable broth (I just used the enitre carton)
  • 6 slices jennie-o extra lean turkey bacon (the kind that is 20calories a slice)
  • pickled jalapenos and carrots.
DIRECTIONS
  1. Coat a large nonstick pot with cooking spray. Add leek, Hungarian pepper, red pepper flakes or
  2. jalapeño pepper, celery, mushrooms and garlic. Sauté over medium high heat until golden, stirring
  3. frequently, about 5 minutes.
  4. Spoon mushroom mixture into a 5 quart crock Pot.
  5. Add cauliflower, beans, oregano, cumin, chili powder, pepper, salt and broth.
  6. Cover and cook on LOW heat setting for 7 to 8 hours.
  7. Just before serving place bacon on paper towel and microwave on high 2-4min until crisp, crumble, remove 1 cup of solids and about 1/4 cup of liquid. Place in blender and puree.
  8. Return to crock pot and stir.
  9. Yields about 1 heaping cup, plus jalapenos if desired and one slice of crumbled bacon per serving at 3pts per serving.
  10. I didnt do the last part and it was just great anyway. It's funny that the cauliflower breaks up during cooking and somewhat resembles ground beef, there is also a cabbage smell from the crock-pot but it does not taste that way at all.
  11. A nice piece of low fat (2pt) cornbread is a great side dish.

This recipe is from the Weight Watchers Website. I tried it for the first time last week, and it was fantastic! 1 heaping cup, plus jalapenos if desired and one slice of crumbled bacon per serving at 3pts per serving. I didnt do the last part and it was just great anyway. It's funny that the cauliflower breaks up during cooking and somewhat resembles ground beef, there is also a cabbage smell from the crock-pot but it does not taste that way at all. A nice piece of low fat (2pt) cornbread is a great side dish.
