Slow Cooker Wild Rice with Fruit and Nuts
  • 2 cups of wild rice or wild rice blend (rinse)
  • 1/2c. dried cranberries
  • 1/2c. raisins
  • 1/2c. dried apricots, chopped
  • 1/2c. almond slivers, toasted
  • 5-6c. chicken broth
  • 1c. orange juice
  • 2 tbsp. butter melted
  • 1 tsp. cumin
  • 2 green onions thinly sliced
  • 2-3 tbsp. chopped parsley
  • salt and pepper to taste
  1. Combine wild rice cranberries, raisins, apricots, and almonds in the crock pot Combine chicken stock, cumin, orange juice and butter in a medium bowl and
  2. mix. Pour over rice cook on low for 7 hours or high for 2 1/2-3 hours. When rice is soft to the bite, add green onions, parsley and salt and pepper. Cook for 10 minutes more.
