Smashed Potato Soup

INGREDIENTS
  • 3 1/2 pounds of potatoes (cut up small)
  • 1/2 cup yellow or red pepper
  • 1 1/2 tsp bottled roasted garlic
  • 1/2 tsp black pepper
  • 4 1/2 cups chicken broth
  • 1/2 cup whipping cream (or half & half, or light cream)
  • 1 cup shredded cheese
  • 1/2 cup green onions, thinly sliced
DIRECTIONS
  1. Combine potatos, peppers, garlic, black pepper and broth in crockpot. Cook for 8-10 hours on low, or 4-5 hours on high.
  2. Lightly mash potatoes, add in remaining ingredients and serve
