Snowball Cookies

- 1 Cup Butter-softened
- 5 Tbls granulated sugar
- 2 tsp pure vanilla extract
- 1/4 tsp salt
- 2 cups flour
- 2 cups finely chopped walnuts or pecans
- 1 1/2 cups confectioner's sugar, separate for dusting baked cookies, twice
DIRECTIONS
- Cream together butter and granulated sugar with mixer.
- Beat in vanilla and salt.
- Gradually add flour and mix.
- Add finely chopped nuts.
- Place in plastic bag and chill for 45 minutes in refrigerator.
- Preheat oven to 350 degrees.
- Line two baking sheets with parchment paper.
- Place confectioners sugar in small bowl.
- When dough is chilled, use a tablespoon or 1-inch spring loaded scoop to make a cookie. Roll dough between palm of hands to make it round ball.
- Place 1 1/2 inches apart on prepared baking sheets.
- Bake in pre heated oven until bottoms are just turning brown about 12-14 minutes. DO NOT OVERBAKE.
- Cool cookies for 2 minutes.
- While cookies are still warm from oven carefully roll them in confectioners sugar. After you have rolled all cookies once, re-roll each in the confectioners sugar.
