Sour Cream Cheesy Chicken Enchilada Casserole

  • Whole Chicken*
  • 16oz. jar Arriba Green Salsa
  • Corn Tortillas
  • White or Yellow Cheese (16oz)
  • Sour Cream
  • *(Whole Chicken can be substituted with pre-made Rotisserie Chicken, but if you plan on doing this you'll also need a can of chicken broth, comes out just as good!)
  1. Boil Chicken 1 hr (or until done)
  2. Peel off meat and save broth
  3. Put a single layer of tortillas at the bottom of casserole/corningware dish
  4. Layer chicken
  5. Layer Green Sauce (about 1/3 of jar)
  6. Layer Sour Cream
  7. Layer Cheese
  8. Repeat 3x, ending with cheese
  9. Pour 1/2 cup broth over the whole thing
  10. Cover and bake 45 minutes
This recipe is delicious! (And can be very easy if you go the pre-made rotisserie chicken route!) It can be a great dinner for guests served with rice/beans, or with chips as a hearty/delicious appetizer.
