Sour Cream Raisin Bars
INGREDIENTS
- 1 cup butter
- 1 cup brown sugar
- 1-3/4 cups flour
- 1-3/4 cups oatmeal
- 1/2 teaspoon salt
- 1 teaspoon soda
- Filling:
- 2 cups raisins
- 3 eggs, slightly beaten
- 2-1/2 tablespoons cornstarch
- 1 cup sugar
- 1 teaspoon cinnamon
- 12 oz. sour cream
DIRECTIONS
- Mix butter, brown sugar, flour, oatmeal, salt and soda until crumbly.
- Press half in greased and floured 9x13 pan.
- Then in a heavy saucepan, over low heat, cook filling ingredients together until like gravy, 5 to 6 minutes.
- Do not scorch.
- Cool.
- Pour over crust; top with remaining oatmeal mixture.
- Bake 20 minutes at 350 degrees.
