Sour Lemon Bars
  • Crust:
  • 1 1/2 cups cake flour
  • 1/4 cup powdered sugar
  • 1/8 tsp. salt
  • 1/2 cup chilled butter, cut in pieces
  • 1/2 tsp. vanilla extract
  • Filling:
  • 5 large eggs, at room temp
  • 2 cups sugar
  • 1 cup fresh lemon juice
  • 3 tbsp. cake flour
  • 3 tbsp. lemon zest
  1. Reduce oven to 325 degrees. While crust is baking, prepare filling. Whisk eggs and sugar in medium bowl to blend. Whisk in lemon juice, then flour. Mix in lemon zest. Pour filling over hot crust. Bake until sides are set and filling no longer moves in center when pan is shaken, about 22 minutes. Cool on rack. Cover and chill at least 3 hours or overnight. Using foil sides as aid, lift dessert from pan. Fold down foil sides. Cut into 1-inch squares.
