South Carolina Caviar
INGREDIENTS
  • 2 15oz Cans Black Eyed Peas-Drained
  • 1 15oz Can Whole Corn-Drained
  • 1 10oz Can Rotel Tomatoes
  • 2 Cups Chopped Red Bell Peppers
  • 1/2 Cup Chopped Onion
  • 1/2 Cup Chopped Fresh or Jar Jalapeno Peppers
  • 1 8oz Bottle of Italian Dressing
  • 1 4oz Jar of Chopped Pimentos-Drained
DIRECTIONS
  1. Combine all ingredients, stirring gently. Refridgerate overnight. Serve with your favorite Corn Chips.

My niece made this recipe for a family gathering. It was a big hit. It is very refresing, a nice change from your average salsa.
