Southern Louisiana Red Beans and Rice

  • 1 pound red beans
  • 1 large onion, chopped
  • dash red pepper
  • 1 lb smoked sausage, sliced
  • 1/2 lb pepperoni, sliced
  • 3 ribs celery, chopped
  • 1 large bay leaf
  • Cumin powder to taste
DIRECTIONS
  1. Wash and pick over beans. Soak beans in six cups cold water overnight. Cook sausage, peperoni, onions, garlic and celery until slightly browned. Add beans and enough water to cover. Add bay leaf, red pepper and cumin powder. Cook slowly for several hours, stirring occasionally. Serve on mounds of hot rice. Sprinkle red beans with Louisiana hot sauce for a tastier treat.
