Southern Potato Casserole

  • 1 1/2 cups chopped onion
  • 2 chopped green bellpepper
  • 1 chopped red bellpepper
  • 1 chopped yellow bellpepper
  • 3 Tsp. flour
  • 1/2 tsp. dry mustard
  • 1 tsp. salt
  • 1 1/4 cups milk
  • 1/2 cup chicken broth
  • 1 1/2 cups shredded mexican cheese
  • 1/2 tsp. pepper
  • 1 cup sour cream
  • 1 (32 oz) package frozen hash-brown potatoes, thawed
  • Paprika
DIRECTIONS
  1. Preheat oven to 350 degrees. Coat a medium saucepan with cooking spray; place over medium heat until hot. Add onion; saute 3 minutes or until tender. Stir in flour, mustard and salt; cook 1 minute. Remove from heat; gradually add milk and broth, stirring constantly with a whisk until blended. Cook over medium heat 5 minutes or until thick, stirring constantly. Remove from heat, add cheeses and pepper, stirring until cheeses melt. Stir in sour cream.
  2. Combine cheese mixture and potatoes; stir well. Spoon into 13x9 inch baking dish coated with cooking spray. Sprinkle with paprika. Cover and bake at 350 for 35 minutes. Uncover and bake an additional 35 minutes. Makes 8 servings.
