Southern Squash Corn

INGREDIENTS
  • 6 pieces bacon, diced
  • 1 medium onion, diced
  • 1 cup yellow squash, sliced 1/4" thick
  • 2 cups frozen white corn
  • salt & pepper
DIRECTIONS
  1. Saute bacon over medium heat to almost crisp. Add onions and cook until tender. Stir in squash and corn. Cook until corn is heated through and squash is tender. Season with salt and pepper to taste.

This recipe comes from my childhood. I live the Pacific-Northwest now, but my roots are in the South. This dish was served at many large family gatherings on Sunday afternoons
