Southern Sweet Potato Casserole

  • 4 lbs sweet potatoes
  • 12 Tbs butter
  • 2 eggs
  • 3/4 tsp cinnamon
  • 1 cup flour
  • 1/2 cup sugar
  • pinch salt
  • 1 cup chopped pecans
DIRECTIONS
  1. Peel and quarter potatoes. Cook until tender on stove top.
  2. Drain and mash.
  3. Melt 4 tbsp butter stir into potatoes, with eggs and cinnamon.
  4. Put in 2 quart casserole dish.
  5. Combine flour and 8 tbsp butter, sugar, salt and chipped pecans
  6. Pour over top of potatoes
  7. Bake at 350 for 30-35 minutes
