Southwest Chopped Salad

- Preparation Time: 10-15 minutes
- Salad:
- 1 c. chopped green cabbage
- 1 c. chopped green leaf lettuce
- 1 c. chopped kale
- 1 c. chopped red cabbage
- 1/2 c. chopped carrots
- 1/2 c. green onion, very thinly sliced
- 1/2 c. sliced ripe olives
- 1 c. Mexican shredded cheese
- Fritos, whole or lightly crushed to taste
- Dressing:
- 1/2 c. of your favorite Ranch dressing
- 1/4 c. of your favorite roasted salsa (or more to taste)
- 1/2 t. chili powder
- 1/2 t. smoked paprika
- 1/2 t. cumin
DIRECTIONS
- Put all the chopped veggies in a large bowl and chill until serving. In a small bowl mix together dressing ingredients and stir well. Chill until serving. When ready to serve, top salad with olives, cheese, and Fritos. Serve dressing on the side.
