Spaghetti Squash with Bay Scallops

INGREDIENTS
  • 1 Medium Spagetti Squash, quartered
  • 8 Slices Applewood Smoked Bacon
  • 18 Medium Bay Scallops
  • Currants
  • 5 tablespoon Butter
  • 1 handful Parsley, chopped
  • 1/2 cup Chardonnay
DIRECTIONS
  1. Squash may be made 1 day ahead.
  2. Heat oven to 400 degrees
  3. Trim bacon to cover exposed flesh of squash.
  4. Bake squash flesh-side up until fork tender and edges are just turning brown.
  5. Remove squash and bacon from oven.
  6. Dice bacon.
  7. Remove flesh from squash with a fork.
  8. Sautee bacon and squash in butter. Add currants at last moment.
  9. Sautee scallops in butter.
  10. Remove scallops and deglaze with wine. Add parsley at last moment.
  11. PLATE:
  12. Put ring in center of plate. Add 1 serving of squash, bacon and currants.
  13. Remove ring.
  14. Place 3 scallops on top of squash.
  15. Top with sauce.
