Spam Stir-Fry
  • 1/2 can SPAM, diced
  • Corn oil
  • 1/4 fresh Pineapple, diced (or canned equivalent, drained; save juice)
  • 1 Carrot, sliced
  • 1 med Onion, sliced
  • 1 clove Garlic, chopped
  • 1c multicolor Bell Peppers, fresh or frozen, lg diced
  • 1/2c Ketchup
  • 2tblsp Brown sugar
  • 4tblsp Cidar vinegar
  • 4tblsp Soy sauce
  • 2tblsp Pineapple juice
  • 1/4tsp Cayenne or other HOT ground pepper (like some HOT Japanese pepper blend!)
  • Salt & Black pepper, to taste
  • 1/2c frozen Peas
  • 2 Green onions, sliced
  • cooked Rice, to serve
  1. Heat large, heavy cast iron skillet or wok over med-high; drizzle w/oil to coat. Add SPAM, pineapple, carrot, onion, garlic and peppers. Cook til browned and beginning to carmelize, 10min or so. In the meantime, mix ketchup, sugar, vinegar, soy and juice together. Add sauce and Cayenne (or whatever) pepper to SPAM & fruit/veggie mix in wok, and salt & pepper to taste; stir well and cook 4-6min. Add peas and heat thru, another 4-6min or until all is well-browned and sticky. Add green onion and toss together to coat. Serve over hot steamed rice!
That's right- SPAM. I love Spam, man. It's hog heaven in a CAN.
