Spanakorizo (Spinach and Rice)

INGREDIENTS
- Cooking Time: 20 to 25
- 1/3 cup extra virgin olive oil
- 2 onions, chopped
- 2 lbs fresh spinach, trimmed and torn
- 8 oz. tomato sauce
- 2 cups water
- 1 tsp dill
- 1 tsp parsley
- 1/2 cup white rice
- salt and pepper
DIRECTIONS
- Cook onions until soft in oil over med. heat.
- Add spinach and cook until wilted.
- Add tomato sauce and water.
- Bring to boil, season and stir in rice.
- Simmer on low uncovered for 20-25 minutes.
