Spanish Chickpea Spinach Stew

- 1 onion, diced
- 4 cloves garlic, minced
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 tsp coriander
- 15 tomatoes, diced
- 3 cups cooked chickpeas
- 1 cup vegetable stock
- large bunch of spinach
- salt to taste
- pepper to taste
- raisins (optional)
DIRECTIONS
- Heat oil in a pan over medium heat. One hot, add the onion, cooking until it is translucent.
- Add the garlic, paprika, cumin, coriander and tomatoes and stir well, letting cook for 10 minutes.
- Add the chickpeas and vegetable stock, stirring well. If desired, also add raisins. Season with salt and pepper. Bring to a simmer and allow to cook uncovered, stirring occasionally, until your stew has reached a desired thickness. In the last few minutes of cooking, add the spinach and allow to wilt but not overcook.
