Spanish Rice Salad with Chicken & Salsa Dressing

INGREDIENTS
- 1 pk Spanish rice, prepared per instructions on package, cooled
- 1/2 cup finely chopped onion
- 1 cup shredded mexican cheese
- 2 11-oz. mexicorn drained
- 1/2 cup finely chopped
DIRECTIONS
- Mix all ingredents. Toss with dressing and serve.
- Dressing:
- 1 cup Thick salsa
- 1/2 cup sour cream
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/4 cup chopped fresh cilantro
- Mix well and toss with salad.
- Top with 1 package prepared chicken fajita meat.
