Spanish Rice Salad with Chicken & Salsa Dressing

  • 1 pk Spanish rice, prepared per instructions on package, cooled
  • 1/2 cup finely chopped onion
  • 1 cup shredded mexican cheese
  • 2 11-oz. mexicorn drained
  • 1/2 cup finely chopped
DIRECTIONS
  1. Mix all ingredents. Toss with dressing and serve.
  2. Dressing:
  3. 1 cup Thick salsa
  4. 1/2 cup sour cream
  5. 1/2 tsp salt
  6. 1/2 tsp cumin
  7. 1/2 tsp chili powder
  8. 1/4 cup chopped fresh cilantro
  9. Mix well and toss with salad.
  10. Top with 1 package prepared chicken fajita meat.
