Spicy Arrabbiata Pasta

  • 4 oz penne pasta
  • 2 tablespoons olive oil
  • 1/4 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 can (7 oz) crushed tomatoes
  • 1/2 teaspoon sugar
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving
  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and red pepper flakes to the skillet, and sauté for an additional 1-2 minutes until the garlic is fragrant.
  4. Stir in the crushed tomatoes and sugar. Simmer the sauce for 15-20 minutes, stirring occasionally, until it thickens slightly.
  5. Season the sauce with salt and pepper to taste.
  6. Add the cooked penne pasta to the skillet and toss to coat it evenly with the spicy red sauce.
  7. Divide the pasta into serving bowls, garnish with fresh basil leaves, and serve with a generous sprinkle of grated Parmesan cheese on top.
