Spicy Cajun Stuffed Chicken
  • 4 oz Pepper Jack Cheese, Shredded
  • 2 cup Baby Arugula, Roughly Chopped
  • 2 large Skinless, Boneless Chicken Breasts
  • 1 Tbsp Olive Oil
  • 1 1/2 Tbsp Cajun Spice Blend (See Tips Below)
  1. *Cut a deep pocket in the thickest part of each chicken breast and stuff with lettuce and cheese (or flatten out chicken breast, add stuffing on one half, cover back up with rest of chicken, and secure with cooking thread)
  2. *Brush chicken with olive oil and season with cajun spice blend
  3. *Preheat grill and grill the chicken until blackened and fully cooked
  4. *Transfer chicken to cutting board, slice, and serve

  7. *You can change the dish up a bit by using feta cheese and spinach instead of the pepper jack and argula...both varieties are great
