Spicy Cranberry Nut Pumpkin Bread
INGREDIENTS
  • Cooking Time: varies on size of pan
  • Preparation Time: 10 minutes
  • 1 -15 oz. can pumpkin
  • 4 eggs
  • 1/2 c. oil
  • 1 t. vanilla
  • 2/3 c. water
  • 1 c. br. sugar
  • 1 c. sugar
  • 3 1/2 c. all-purpose flour
  • 2 t. baking soda
  • 1 1/2 t. salt
  • 1 T. pumpkin pie spice
  • 1 c. dried cranberries
  • 1 c. chopped nuts
DIRECTIONS
  1. Preheat oven to 350`. Mix dry ingredients, cranberries & nuts & set aside. Mix sugars, oil, water, vanilla & eggs & beat well. Add pumpkin & mix well. Add dry ingredients & mix just until blended. Pour into three 7x3 inch loaf pans. Bake for 50 minutes or until tested done. Any size loaf pan can be used, just adjust the time for the different sizes. Muffin pans can also be used.
