Spicy Gingerbread Cookies

  • 2 1/4 C sugar
  • 3/4 C water
  • 3/8 C dark corn syrup (just under 1/2 C)
  • 1 1/4 Tbs cinnamon
  • 2 tsp ground cloves
  • 1 Tbs ginger
  • 2 cubes + 2 Tbs margarine
  • 1 Tbs baking soda
  • 8 C flour
DIRECTIONS
  1. Preheat oven to 350
  2. Combine sugar, water, corn syrup, cinnamon, cloves and ginger in a sauce pan. Cook over medium heat, stirring until sugar is dissolved.
  3. Dissolve baking soda in 1 Tbs water, and gradually add to mixture.
  4. Add flour gradually and work until dough is firm.
  5. Divide dough into thirds and roll out on floured surface to 1/8 inch, and cut with cookie cutters.
  6. Bake 8-12 minutes, and cool slightly before removing from cookie sheet. Allow to cool completely before frosting
