Spicy Mustard Shrimp
INGREDIENTS

  • 2 teaspoons of olive oil
  • 1 pound peeled and deveined large shrimp
  • 1 tablespoon whole-grain Dijon mustard
  • 1 1/2 teaspoons chipotle hot pepper sauce (such as Tabasco)
  • 2/3 cup (3-inch) diagonally cut green onions
  • 1 cup diced peeled mango (1 medium or drained fruit cup)
  • 1/4 cup chopped fresh cilantro
  • 4 lime wedges
DIRECTIONS
  1. Heat oil in a large nonstick skillet over medium heat
  2. add shrimp and sauté for 1 minute
  3. add mustard and pepper sauce to pan and sauté for 2 minutes stirring frequently
  4. stir in onions and cook for 1 minute
  5. remove from heat and add mangos
  6. sprinkle with cilantro
