Spicy Rhubarb and Apple Compote
INGREDIENTS

- 2-3 stalks of rhubarb chopped into 1 inch cubes
- 2 large sweet apples
- 1 level tablespoon of sugar
- 1 inch piece of fresh ginger
- Juice of 1/2 a lemon
- 2 tablespoons of water
- 1/2 teaspoon of cinnamon
DIRECTIONS
- Peel and chop the apples and cook on the stove on a medium heat with the lemon juice and the water for about 15 minutes until it starts to soften.
- Add the rhubarb, sugar, cinnamon and grated ginger and cook for a further 10 minutes until the rhubarb is softened.
