Spicy Rhubarb and Apple Compote

  • 2-3 stalks of rhubarb chopped into 1 inch cubes
  • 2 large sweet apples
  • 1 level tablespoon of sugar
  • 1 inch piece of fresh ginger
  • Juice of 1/2 a lemon
  • 2 tablespoons of water
  • 1/2 teaspoon of cinnamon
  1. Peel and chop the apples and cook on the stove on a medium heat with the lemon juice and the water for about 15 minutes until it starts to soften.
  2. Add the rhubarb, sugar, cinnamon and grated ginger and cook for a further 10 minutes until the rhubarb is softened.
