Spicy Shrimp Scampi
  • 4 Tbsp Extra Virgin Olive Oil,
  • 1/2 tbsp fresh ginger, peeled and finely chopped
  • 3 cloves of garlic, peeled and finely sliced
  • 2-3 fresh red chilies, deseeded and finely sliced
  • 16 raw large shrimp peeled
  • 1 cup White Wine
  • 1 cup unsalted Butter do not use Margarine
  • 3 sun dried tomatoes cut in small pieces
  • 1-2 lemons to taste
  • 1/2 cup good handful of parsley roughly chopped
  • Sea salt
  • Freshly ground black pepper
  • Optional long slices of ciabatta bread toasted
  1. Into a large, hot frying pan put around 4 tablespoons of olive oil, your ginger, garlic, chili, sun dried tomatoes, butter and wine.
  2. After well mixed, add shrimp.
  3. Fry for about 3 minutes then turn the heat down and squeeze in the juice of one lemon.
  4. Add the parsley and a couple of lugs of olive oil.
  5. Toss over and remove from heat. The sauce may need a little more lemon juice and you can season to taste.
  6. Serve with bread.
