Spicy Turkey Pasta
INGREDIENTS
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 pound ground turkey breast
- 1 (28-ounce) can chopped Italian tomatoes
- 1 (6-ounce) can tomato paste
- 1/2 teaspoon crushed red pepper
- 1 teaspoon oregano
- 1/4 teaspoon freshly ground pepper
- 2 cups fresh baby spinach leaves (optional)
DIRECTIONS
- Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion and garlic and cook until onion is translucent. Add turkey and cook until browned. Add tomatoes, tomato paste, and seasonings; cover and simmer for 20 minutes. Add cooked pasta and spinach; cover and cook on low for 2 to 3 minutes, or until spinach wilts a bit and flavors are blended. Serve over whole wheat spaghetti or penne. Makes 4 servings.
