Spicy Vodka Pasta

  • ¼ Cup Olive Oil
  • ½ a tin of Anchovies
  • Salt (to taste)
  • 1 Garlic Clove Grated
  • ½ Cup Tomato Paste
  • 2 Cups Heavy Cream
  • 1/3 cup vodka
  • 1 Pound of your choice of pasta (I recommend Rigatoni or Penne)
  • Crushed Chili flakes (to taste)
  • Ground Cayenne Pepper (to taste)
  • 1 Tablespoon Unsalted Butter
  • Handful of Shredded Mozzarella Cheese
  1. Heat the olive oil in a large pan add anchovies and stir until anchovies have dissolved
  2. Add grated garlic, Meanwhile, boil the pasta water in a large pot
  3. Add vodka and let cook on high for about 5 minutes. After 3 minutes, add tomato paste and mix the ingredients together until the tomato paste is cooked well and simmering
  4. Add heavy cream, crushed chili flakes, cayenne pepper and shredded mozzarella cheese. Stir everything together until all the ingredients are mixed evenly
  5. Once water is boiling, add salt and 1 pound of pasta. Keep stirring the sauce until thickened
  6. Once pasta is al dente, drain the water. Add butter to pasta and incorporate gently
  7. Add pasta to the large pan with the sauce and keep stirring
  8. Mix until evenly coated and serve immediately!
Pasta with a ton of heavy cream, what's not to love? Ironically this recipe does not include vodka.
