Spinach Artichoke Dip
  • 1/2 sweet yellow onion, finely chopped
  • 4 cloves garlic, pressed
  • 1 10-oz box frozen spinach, defrosted and drained
  • 2 can artichoke hearts in water, drained
  • 2 packages cream cheese, softened
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 2/3 cup grated parmesan cheese
  • 1/4 cup shredded mozzarella
  • A few pinches red pepper flakes
  • Salt, to taste
  1. Preheat oven to 350.
  2. Saute onion and garlic in oilve oil. Mix spinach onion, and garlic in a large bowl. Add cream cheese; mix. Add mayo grated cheeses, red pepper flakes and slat; mix well. Add artichoke hearts. Transfer mix to baking dish, bake until hot and bubbly.
  3. Serve with fresh sliced baguette, tortilla chips, and/or fresh veggies.
This can be made up to 1 day in advance and refrigerated until ready to bake.
