Spinach Arugula Salad

- SALAD:
- 1/2 cup raw pecans
- 3 cups organic arugula spinach blend
- 1 Granny Smith or other tart apple, sliced
- 1/4 cup sliced red onion
- 2 Tbsp dried cranberries
- Crumbled Feta cheese or goat cheese (optional)
- DRESSING:
- 3T fresh lemon juice
- 1 Tbsp maple syrup
- 3 Tbsp olive oil
- Salt & pepper to taste
DIRECTIONS
- Preheat oven to 350 degrees F
- Bake pecans on a baking sheet for 8-10 minutes.
- In a serving bowl, whisk together all dressing ingredients. Prepare and add all salad ingredients to the dressing mixture.
- Add the pecans and toss to combine.
