Spinach Arugula Salad

  • SALAD:
  • 1/2 cup raw pecans
  • 3 cups organic arugula spinach blend
  • 1 Granny Smith or other tart apple, sliced
  • 1/4 cup sliced red onion
  • 2 Tbsp dried cranberries
  • Crumbled Feta cheese or goat cheese (optional)
  • DRESSING:
  • 3T fresh lemon juice
  • 1 Tbsp maple syrup
  • 3 Tbsp olive oil
  • Salt & pepper to taste
DIRECTIONS
  1. Preheat oven to 350 degrees F
  2. Bake pecans on a baking sheet for 8-10 minutes.
  3. In a serving bowl, whisk together all dressing ingredients. Prepare and add all salad ingredients to the dressing mixture.
  4. Add the pecans and toss to combine.
