Spinach Bars
INGREDIENTS

  • 4 tablespoons butter
  • 3 eggs, slightly beaten
  • 1-cup flour
  • 1-teaspoon baking powder
  • 1-cup milk
  • ½ teaspoon salt
  • 1-teaspoon oregano
  • 1 small onion, finely chopped
  • 8 ounces Cheddar Cheese, grated
  • 8 ounces Monterey Jack Cheese, grated
  • ½ teaspoon garlic powder
  • 2 Packages frozen chopped spinach, completely drained
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. In a 13” X 9” X 2” baking pan, melt butter and set aside.
  3. In large mixing bowl, combine remaining ingredients and spread into the pan.
  4. Bake at 350 degrees for 35 minutes. Cut into squares and serve.
  5. If you cut the bars into bite-sized pieces, it makes a great appetizer.
RECIPE BACKSTORY
This is my sister's recipe. I've no idea where she originally got it, but it's a pretty darn good way to get vegetable averse kids (and adults) to eat spinach.
