Spinach Feta Triangles

INGREDIENTS
- 1 tablespoon butter
- 1 egg, lightly beaten
- 1/2 cup onion, finely chopped
- 1 pkg frozen chopped spinach, thawed and drained
- 8 sheets phyllo
- 1 cup crumbled feta cheese (I recommend using Athens brand, the tomato/basil flavor - it's delicious!)
- 1 stick butter, melted
- salt
- pepper
DIRECTIONS
- In a skillet, melt butter and cook onion until softened (about 5 minutes). Remove your pan from the heat and stir in your spinach, cheese and egg. Add salt and pepper.
- Preheat oven to 375 degrees.
- Roll out one layer of phyllo dough and brush with butter. Top with another layer of dough, brush with butter. Repeat once more. Cut rectangle into 3 even pieces (or 5 pieces if you want smaller triangles).
- Place tablespoon of the spinach mixture in lower left corner of one of the pieces and fold up as you would a flag - folding the lower corner up to form a triangle and continuing to fold up in the shape of a triangle.
- Place triangles on a baking sheet. Bake for 15 minutes until golden brown and puffed.
- Instead of baking, you can also place them on a baking sheet and freeze them for an hour. Then put them into an air tight container or freezer bag.
