Spinach and Fresh Fruit Salad

INGREDIENTS
  • 1/3 cup raspberry vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons granulated sugar
  • 1/4 teaspoon dried basil, crushed
  • 1/8 teaspoon salt
  • 8 cups (about 2 small bunches) fresh spinach, washed and coarsely chopped
  • 2 cups red apple, thinly sliced
  • 1 cup kiwi fruit, thinly sliced
  • 1 cup oranges, peeled, sectioned
  • 1 cup strawberries, sliced
  • 2 tablespoon sliced almonds, toasted
DIRECTIONS
  1. COMBINE vinegar, olive oil, sugar, basil, and salt in small bowl; whisk until blended.
  2. Combine spinach, apple, kiwifruit, oranges, and strawberries in large bowl.
  3. ADD dressing to salad; toss well to coat.
  4. Sprinkle with almonds.
  5. Serve immediately.
