Split Peas and Barley Soup

  • 2 cups split peas
  • 6 cups water
  • 2 cup chicken broth
  • 2 inches chopped leeks
  • 1 clove minced garlic
  • 1 cup barley
  • 2 carrots diced
  • 1 cut up smoked ham hock
  • 1 bay leaf
DIRECTIONS
  1. Combine all ingredients into a large soup pot
  2. Bring to a boil
  3. lower heat to simmer
  4. Cover and cook
  5. 50-60 minutes on low
  6. Watch cause you may need to add more broth
  7. Remove the pot from the heat
  8. Remove the ham hocks
  9. Remove the meat discarding the skin, fat and bones
  10. Chop the removed meat
  11. Reserve the meat
  12. Puree soup if desired
  13. Add broth to thin if needed
  14. Add meat
  15. Serve and Enjoy
