Squash Casserole

  • 3 Medium yellow squash sliced thin
  • 1 rib Celery chopped
  • 1 Onion chopped
  • 1/2 cup Cheddar cheese grated
  • 1 Bell pepper chopped
  • 4 Slices of bread dried, toasted, and crumbled
  • 1 teaspoon Salt
  • 1 Egg beaten
  • 1 small can Rotel tomatoes

For any of you that had a garden or had wonderful people that gave you fesh squash over the summer. Take it out of your freezer for a great side dish for the ham or turkey. Nothing better than a little taste of summer in winter.
