Squash Rice Casserole
INGREDIENTS
  • 2 cups rice
  • 6-8 fresh squash ( or for those in hurry, 2 large cans squash)
  • 1 large can cream mushroom soup
  • 1 large can creamy chciken soup
  • 1 large bag mixed pre-shredded cheese( mixed variety cheese, choice of your flavor)
DIRECTIONS
  1. 1. boil rice till tender but not totally done.
  2. 2. boil fresh squash, if using canned squash skip this step.
  3. 3. in large casserole /or any large baking dish, layer each ingredient, ex: rice, squash, cheese, mushroom soup, chicken soup, rice, squash, cheese, mushroom soup, chicken soup and so on, till all ingredients are used.
  4. 4. Bake at 375, till all cheese is melted, and soup is creamy throughout casserole, or until lightly golden brown on top.
  5. enjoy.
  6. This is also a great 1 dish meal for those vegetarians or those who just want good food, and eating light.
